Vegan Banana Brookies

kicking the weekend off with these insane ✨VEGAN BANANA BROOKIES✨wowww you guys! these are almost too good to be true. first of all, what’s better than a brownie and a cookie stuck together? .....basically not much 😂 add the fact that these are vegan, dairy free, gluten free, and that the gooey factor is on point 💯 and your weekend is about to get that much better 👏🏻

you know i love a good brownie🥰 anything i can throw some ice cream and whipped cream on top of is a next level dessert IMO. the recipe below yields 9 brookies from an 8x8 pan and is honestly pretty easy to whip up! 👩‍🍳perfect for a weekend treat or to prep for the week for when your sweet tooth kicks in! hope everyone enjoys this beautiful weekend! xoxox 💋

WHAT YOU NEED for COOKIE BASE:

+ 1 1/4 cup almond flour

+ 1/4 cup coconut flour

+ 1/4 cup maple syrup

+ 2 tbsp coconut oil

+ 1 tsp vanilla

+ 1/4 tsp pink salt

+ 1/2 tsp baking soda

+ 1/4 cup dark chocolate chips

WHAT YOU NEED for BROWNIES:

+ 2 large bananas, or 3 small (mashed)

+ 2 tbsp coconut oil

+ 1 tbsp apple cider vinegar

+ 1 tsp vanilla

+ 1/4 cup unsweetened almond milk

+ 1/4 cup coconut sugar

+ 1 tsp baking soda

+ 1/2 cup oat flour

+ 1/2 cup cacao powder

+ 1/4 cup dark chocolate chips

HOW TO:

  1. Preheat oven to 350 degrees and line an 8x8 pan with parchment paper.

  2. In a large bowl, mix together all ingredients for cookie base. Place dough down in pan as your first layer. Use your hands or a spatula to evenly press the dough into the pan. Set aside.

  3. Now it’s time to make the brownie layer. In a large bowl, whisk together mashed bananas, coconut oil, apple cider vinegar, vanilla, milk, and coconut sugar. Set aside.

  4. In a small bowl, mix oat flour, cacao powder, and baking soda until fully combined. Gradually add to large bowl to mix together all ingredients to form brownie batter. Fold in chocolate chips and then layer on top of cookie base in pan.

  5. Add a few extra chocolate chips on top and bake for 30-33 minutes. Let cool before slicing and ENJOY!
