Peanut Butter Cocoa Puffs

when i was younger my mom had a special snack cabinet that was only for my brother lol this is funny when i think back on it 😝 i’m not sure why. if i said this to her today she would tell me i was lying but i swear he had his own cabinet filled with all his own snacks! i’m not making it up! which for any of you who know my brother, you know that means my mom obviously put all the best treats in his cabinet! the snacks ranged, but what i remember most were blue doritos, elf cookies, and of course the sugary cereal….

enter my (almost) sugar free✨PEANUT BUTTER COCOA PUFFS✨before you ask - yes, they turn your milk to chocolate! gosh, i love it! 🥰 now look, i’ll be honest, nothing is going to be as good as the real thing - it’s just not possible, but these are quite close! they completely satisfy the craving and there’s just not many snacks that are comparable to a good bowl of cereal. simple, yet delicious!💯

gluten free, dairy free, and basically sugar free, this is a breakfast bowl that is totally guilt free. serve with your choice of milk, or pop them in your mouth as is, these are my new favorite treat! 🙃

WHAT YOU NEED:

(yields about 4 bowls)

+ 1/2 cup oat flour

+ 1/2 cup almond flour

+ 1/4 cup cocoa powder

+ 1 tsp. baking powder

+ 1/2 cup creamy all natural peanut butter

+ 1/4 cup pure maple syrup

+ 1 tsp vanilla

+ 1 egg

HOW TO:

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

  2. In a large bowl mix together peanut butter, syrup, vanilla, and egg until smooth.

  3. In a separate small bowl, combine flours, cocoa powder, and baking powder. Gradually mix dry ingredients into the peanut butter mixture.

  4. Use your hands to form small balls, each the size of about 1 tsp. (I think the smaller the better) and line on the baking sheet. Bake for 12-15 minutes. Serve with your choice of milk and ENJOY!
