QUINOA EGG FLORENTINE

QUINOA EGG FLORENTINE so healthy and so delicious! all you need is a few fridge staples and you will be impressing yourself, your fam, your boo, or your roomies in no time!

this looks like something you could order at brunch in my opinion. packed with protein and flavor, this dish brings happiness with every bite. just another example of how eating healthy does not equal boring!

WHAT YOU NEED:

(serves 1 - prep/cook time: 10 minutes)

  • 1/2 cup cooked quinoa

  • 2 eggs

  • 1 tbsp onion, chopped

  • 1 tbsp scallions, chopped

  • 4-5 cherry tomatos, sliced

  • 1 large handful of spinach, chopped

  • 2 tbsp manchengo cheese, shredded

  • 1 tbsp avocado oil

  • salt, pepper, EBTB seasoning to taste



HOW TO:

  1. Warm avocado oil in a small skillet over medium heat. Add onion, scallions, and tomatoes and cook for 2-3 minutes. Next add in chopped spinach and spices. Once spinach is almost cooked add in quinoa and mix everything together.

  2. Using your spatula, create a small space where you can drop your eggs. Crack both eggs into the middle of the skillet. Add a little EBTB seasoning if you’d like and your cheese. Let cook for about 5 minutes until eggs are fully cooked. (TIP: helps to cover for about 2 minutes on low heat). Remove cover, top with sliced avocado and scallions and ENJOY!
