Coconut Milk Chocolate Pudding

the newest dessert on repeat in this house - dairy free✨COCONUT MILK CHOCOLATE PUDDING✨layered and topped with dairy free cool whip of course! ohhh my oh my. a chocolate lovers dream🥰 i could swim in this. no lie. wondering if would it be acceptable to use this as a chocolate face mask? 🧖‍♀️ i mean it’s all organic, so maybe?? wait, no. why would i even think to waste it for something like that!

but for real, the is dairy free chocolate pudding made from all ingredients you can pronounce - um yay 👏🏻 you guys, this is one you need. growing up i loved mixing cool whip in chocolate pudding 💯 it made it so light and fluffy and this dessert is taking me back in time to that obsession. layer it with your favorite cool whip or whipped cream, or don’t, either way you’ll be going in for a bigger spoonful before you know it! 😋

WHAT YOU NEED:

+ 2 cans light coconut milk

+ 3 cage free eggs

+ 3/4 cup coconut sugar

+ 1/3 cup cocoa powder

+ 2 tbsp coconut flour

+ 2 tbsp dairy free butter OR grass-fed if not DF

+ 2 tsp vanilla

+ 1/4 cup dark chocolate chips

.

HOW TO:

  1. Whisk coconut milk, eggs, coconut sugar, cocoa powder, and coconut flour in a large saucepan over medium heat. Whisk constantly for 15-20 minutes or until thickened. Remove saucepan from heat and stir in butter, vanilla, and chocolate chips until melted.

  2. Next fill a large bowl with ice. Put pan in ice and let stand to cool. Stir occasionally for about 30 minutes or until thoroughly chilled. Place in the fridge for at least another hour before serving.

  3. Layer with cool whip or whipped cream and ENJOY!
