Creamy Garlic Cauliflower Pasta Sauce

are you team red sauce or team white? i’d have to say i’m usually a white sauce kinda girl, especially when it comes to this ✨CREAMY GARLIC CAULIFLOWER PASTA SAUCE✨ this is a fun one! it’s a homemade pasta sauce made from a head of cauliflower and a few add ins! so easy, so healthy, and a great way to add in some extra veggies without even knowing they’re really on your plate! dreamy & creamy! 🙌🏻

this creamy pasta sauce is gluten free, grain free, dairy free (use DF butter), and low carb! throw it on top of zoodles and you’ll have a full plate of veggies! 🤗 i like to add garlic baked chicken and spinach to this pasta dish and top it with some crushed red pepper 💯 so so delish!

WHAT YOU NEED:

+ 1 small head of cauliflower

+ 2 tsp fresh garlic, chopped

+ 1 tsp garlic powder

+ 1 tsp black pepper

+ 1/2 tsp pink salt

+ 3 tbsp nutritional yeast

+ 3/4 cup unsweetened almond milk

+ 2 tbsp grass-fed butter or dairy free butter

+ crushed red pepper for topping

HOW TO:

  1. Fill a large pot with water and bring to a boil.

  2. While waiting for water to boil, chop cauliflower into small florets.

  3. Once water is boiling, add cauliflower to pot and let boil for about 7 minutes, or until soft. (make sure you can stick a fork through)

  4. Once cooked, drain cauliflower in a colander and place into food processor. Add fresh garlic, garlic powder, salt, pepper, nutritional yeast, milk and butter, and blend until smooth and creamy (about 2 mins).

  5. Pour sauce over pasta and whatever else you want to add and enjoy! NOTE: I like to mix the pasta and sauce in a pot over the stove to combine before serving.
