Balsamic Bacon Brussel Sprouts

ok, name your favorite veggie…1,2,3 go! 🥦 eeek it’s so hard for me to pick a favorite, but i will say any green veggie is just about tied for first in my opinion 👏🏻 which makes my✨BALSAMIC BACON BRUSSEL SPROUTS✨one of my top favorite side dishes! i’ve been making this for years i almost can’t believe i’m only now sharing it with all of you! you’re going to love it! the salty crunch from the bacon 🥓 paired with the sweet honey goat cheese 🧀 red onions 🧅 and the added balsamic reduction drizzle it out of this world!💯🙌🏻

this side dish will add flavor to any meal! serve it on the side of fresh fish, chicken and mashed potatoes, a burger, or add it on top of a big salad! this may only be a side dish but it plays a major role!

WHAT YOU NEED:

+ 4 cups brussel sprouts, sliced into quarters

+ 1/2 red onion, julienned

+ 5 slices bacon, cooked & crumbled into small pieces

+ 3 tbsp honey goat cheese, crumbles

+ 2 tbsp olive oil

+ 1 tbsp balsamic vinegar

+ 1/4 fresh squeezed lemon

+ 2 gloves garlic, minced

+ 1/2 tsp onion power & garlic powder

+ salt/pepper to taste

+ 1-2 tbsp balsamic reduction


HOW TO:

  1. Preheat oven to 350 degrees and line baking sheet with parchment paper.

  2. Slice brussel sprouts into quarters and place in a medium/large bowl. Add sliced red onion to this bowl as well. Set aside.

  3. In a small bowl, mix together olive oil, balsamic, fresh lemon, fresh garlic, and spices. Pour marinate over brussel sprouts and onions and mix well. TIP: I like to use my hands to help gently massage the marinate into the brussel sprouts. Let sit for about 10-15 minutes.

  4. Bake in the oven for 30-35 minutes. Remove from heat and sprinkle with crumbled bacon and goat cheese. Drizzle balsamic drizzle on top and enjoy!TIP: I like to add the cooked bacon after the brussels sprouts have cooked to help prevent burning the bacon bites. Serve as a side and ENJOY!
